Date Day at the Theatre!

Last Christmas my mother and Father treated hubby and I to a pair of tickets to see Wicked and today is the day we got to use them! I decided to wear my new ASOS dress and Moschino shrug.


We headed up to Victoria station and romantically reinacted (part of) our first date. This consisted of a swift drink at the Weatherspoons in the station. Then we headed for a cheeky Nandos! With all of the wedding planning this year we really haven’t actually had just time out for the two of us so for us to have the chance to do this is lovely!

Next we headed to the theatre. The show was incredible- I hadn’t seen it since I was younger, and hubby had never seen it but we were left with smiles on our faces (Wicked is now on of my husbands firm favourites at the theatres) and songs stuck in our head- especially defying gravity- it certainly makes you think of The Wizard of Oz in another light. I love trips to the theatre, its not something we do too often, but have got into more over the last few years.

As pup was home alone, we headed back home and I decided to make a pumpkin pie. here is the recipe I followed:


For the pastry you will need:

2 cups plain flour

3 tbs caster sugar

150g butter (cold and chopped)

2-3 tbs icy cold water

Method:

Place the flour, sugar and butter into a bowl and crumble together with your fingers until the mixture resembles breadcrumbs.

Slowly add the water until it resembles a dough.

Wrap in cling film or put into a ziplock bag and chill in the freezer for at least half and hour.

For the filling you will need:

3/4 cup granulated sugar

1/2 teaspoon salt 

1tsp ground cinnamon

1/2 tsp ground ginger

1/4 teaspoon ground cloves

2 large eggs

1 can pumpkin purée

1 can evaporated milk

Mix all of the sugar and dry spices together.Beat the two large eggs and a large bowl. Stir in the pumpkin and the sugar and spices.

Next add the evaporated milk

Roll your pastry out and place into a pie dish.

Pour your pumpkin mixture into the pie crust and if you wish to decorate with some of the left over pastry (I chose hearts for date day!) 

Make sure you wash your pastry with egg or milk (I used milk)


Bake in a preheated 220 degree oven for 15 minutes. Then reduce the temperature to 180 degrees and bake for 40-50 minutes or until a knife comes out clean when inserted near the centre.

Cool on a wire rack for two hours! (I did trim the edges of my pie as they had gone slightly burnt!)

On this note, I’m signing off for today and having a large slice of pumpkin pie as it looks far too tempting to leave any longer!
